Whether it be a wedding cake, engagement cake, birthday cake or a novelty
cake in most cases the cake can be made in a size to suit the number of guests
you have.
Where a cake can not be made larger you can have a cutting cake made for the
kitchen to supplement the number of serves you require. This is an
economical way of making up the number of serves as this cake does not need to
be decorated as no one will see it.
Where a cake can not be made smaller without compromising the design, fake
cakes (made of poly styrene) can be substitute for real cake.
Here is a guide to what size cake you would need for the number of guests you
wish to serve.
A DESERT serving is approx. 2.5cm x 5cm x 8cm.

This guide shows how to cut different shaped cakes into dessert size
pieces of 1 in. x 2 in. by the height of the cake. If smaller or larger
serving sizes are required, the same cutting format is followed only the size of
the slice is altered to suit.
With multi tiered cakes, the first step is to remove the top tier and
begin cutting into the second tier, then the third and so on.
Round Cakes
With round cakes you generally cut an inner circle two inches in from the
edge of the cake then slice up the ring into one inch pieces. Then you cut
another ring two inches from the edge and again slice into one inch pieces.
With smaller cakes you may only be able to cut one ring, where as with larger
cakes you would continue to cut two inch rings until the centre core is reached
at which point you would cut it into 2, 3, 4, or 6 pieces depending on the size
of it. With very small round cakes you would not cut any rings, just the

Square and Rectangle Cakes
With square and rectangular cakes you slice the cake into two inch slices
then slice these into one inch pieces. See the diagram below.
